The NCCAOM handbook outlines their apprenticeship policies for taking the national exam. If you are not planning to practice in California, this might be a good option. The Candidate Handbook is at http://www.nccaom.org/applicants/index.html

Basic info to sit for the NCCAOM exam:
Your mentor needs to have at least 500 patient visits with at least 100 different patients per year for the last 5 years (basically 10 visits per week)
You need a minimum of 4 "years" or 40 points total
1000hrs apprenticeship = 1 year of study, 10 points
450hrs of classes = 1 year of study, 10 points
You can do the entire thing as an apprenticeship or didactic courses+apprenticeship

The CAB (California Acupuncture Board) tutorial/apprenticeship program is at http://www.acupuncture.ca.gov/ed_providers/tutorial.shtml

Basics to qualify for the CA exam:
Minimum of 4 years of study (didactic plus tutorial)
Supervisor must be a CA practitioner of at least 10 years experience
The didactic courses to be taken are very specific (& need to be taken at a TCM school)
The tutorial/apprenticeship part is about 2000hrs in addition to those didactic course requirements
